Ingredients
  • 6 cups gluten free rolled oats
  • 1 cup whole flax seeds
  • 2 cup roughly chopped nuts (almonds, pecans, walnuts...)
  • ½ cup brown sugar
  • 2 tsp cinnamon
  • ½ cup maple syrup
  • ½ cup liquid coconut oil
  • 1½ tsp sea salt
  • 1 Tbsp vanilla
  • 2 cups dried fruit
Instructions
  1. Preheat oven to 250 degrees F.
  2. In a large bowl, combine the oats, flax seeds, nuts, cinnamon, and brown sugar.
  3. In a separate small bowl, combine maple syrup, coconut oil, vanilla, and salt.
  4. Combine wet and dry mixtures and pour onto 2 lined sheet pans (jelly roll pans with lips work best).
  5. Bake for 1 hour and 15 minutes. Stir every 15 minutes or so to make sure the granola browns evenly.
  6. Remove from oven and allow to cool slightly.
  7. Transfer into a large bowl and stir in dried fruit until evenly distributed.
  8. Once the granola is completely cooled, store in an airtight container.
