Using up Leftovers

As you can see from some of my recent posts (Apple Cinnamon Muffins and Frozen Banana Treats), I love to be able to use up any leftover food that we have.  I hate to see food go to waste.  For me, throwing away food is basically throwing away money.  That’s not to say that it doesn’t happen, but I try my best to make sure that I either use the food up or toss it in the freezer before it goes bad.  It’s pretty cool how many foods can be tossed in the freezer to extend their life.

Munchkin and D don’t usually mind when I decide to use up fruits as they end up with smoothies and lots of different baked goods.  I’m always looking for new ways to use up fruits.  I enjoy watching food shows and looking at magazines for ideas.  Food bloggers are also a great inspiration for new recipes.  My favorite resources contain pictures of the foods.  I prefer cookbooks and recipes with at least a picture of the finished food.

All this to day that today, I’m going to be busy chopping, slicing, and dicing more bananas and apples.  Munchkin has put in a request for more apple cinnamon pancakes and muffins.  D wouldn’t mind some banana nut muffins for now and to put in the freezer for later.  We’ll have to see what the weather is going to be like outside.  If it’s too hot, the baking will need to be set aside for a cooler day, and the fruit will be stored in the freezer.
