Project 365 – #136 We have some apples around the house that are a little too ripe for just eating, but they’re perfectly fine for baking. I decided to make some gluten free apple cinnamon muffins with those apples. I just used some of Pamela’s baking mix as the base and added some cinnamon, diced apples, and a splash of almond extract to the muffin recipe on the bag. I wanted something easy and delicious.
