Crockpot Chicken Taco Soup This simple dish has quickly become a favorite around our house. The original idea came from our neighbor. A few quick modifications lead to this version. This is not an overly spicy dish. If you want more heat, just add more chilies and/or seasoning. You could easily add some seasonal veggies to add more flavor/color. One thing that we have really missed after going gluten free was good tortilla shells.  Most gluten free shells either taste bland, or they fall apart when you roll them. Gluten Free Chicken Soft Tacos Ingredients: 1 lb ground chicken (or turkey) 1/2 C salsa (I used fresh salsa) gluten free wraps (I used sandwich petals) 1 C shredded cheese Sour cream Shredded lettuce Chopped tomatoes Salsa Olives Directions: Brown ground chicken, drain fat Add salsa, cook a low for a few minutes Warm tortillas in microwave (or skillet if preferred) Spread sour cream on wrap, add meat, cheese, lettuce, tomato, salsa, olives… Roll wrap and enjoy.  Serve with rice and beans if desired.
