For Valentine’s Day, I wanted to have a special dessert, but I didn’t have the time to bake anything that day.  I thought it would be fun to have some chocolate covered strawberries.  We’ve had store purchased chocolate covered strawberries before, but they’re rarely very good plus they are usually quite expensive.  We had to stop and get milk at the grocery store, so we picked up a container of strawberries for $2.50. I placed about 1 cup of chocolate chips and 1 Tbsp of coconut oil in a microwave safe bowl.  I microwaved at 30 second intervals, stirring after…

Gluten Free Cinnamon Raisin Biscuits

This is my semi-homemade version of gluten free cinnamon raisin biscuits.  Sometimes it’s nice to be able to use a mix when making gluten free baked goods. Ingredients: 2 Cups Pamela’s Baking Mix 1 Stick of butter 2/3 Cup buttermilk 1/2 tsp vanilla 3 Tbsp brown sugar 1-2 Tbsp cinnamon 1/4 raisins (more if desired) Frosting ~ powdered sugar, cream, vanilla Directions: Cut butter into baking mix until thoroughly combine; pea sized pieces of butter Add buttermilk, vanilla, brown sugar, and cinnamon until thoroughly combined Stir in raisins; dough will be loose and moist Drop biscuits onto cookie sheet or…
