It turns out that both D and Munchkin enjoyed having the menu posted on our board this week. I decided to do it again this week.
D has off on Thursday and Friday, so I want to make sure that he has hearty lunches these days. (He usually has leftovers for lunches.) On work days, D usually has belgium waffles that I have made for him and placed in the freezer.
Monday:
BBQ Pulled Chicken Sandwiches using Gluten Free Homemaker’s Focaccia Bread
Homemade potato chips with homemade ranch dressing
Tuesday:
Spaghetti with meatballs
Homemade gluten free bread
Wednesday:
Homemade gluten free sub sandwiches
Thursday:
Breakfast – Omelets
Lunch – Nachos
Dinner – Pizza and/or Ham & Cheese Calzones using Gluten Free Homemaker’s calzone recipe
Friday:
Breakfast – Pancakes
Lunch – Tacos
Dinner – Homemade personal pan gluten free pizza
Saturday:
Breakfast – gluten free cinnamon drop biscuits
Lunch – hamburgers/hot dogs
Dinner – grilled chicken, baked potatoes
Sunday:
Breakfast – gluten free coffee cake
Lunch – crockpot roast chicken
Dinner – grilled sausage

Your menu plan sounds wonderful – is it difficult to plan and make things interesting while making it gluten free?

When we first started the gluten free diet, it was definitely more difficult to keep things interesting. As I've gotten use to cooking/baking gluten free, things have gotten much easier. Right now, I'm just sticking with some requested items, so several things are the same from week to week. I'm always trying to add new things into the menu line-up. Thankfully, my husband and daughter enjoy trying out new things.
I received some new baking pans for Christmas, so I chose to do a few things this week that would incorporate the use of the pans into the mix. I received a sub roll pan and personal pizza pans, so we'll see how that goes.
