GF Breakfast Bars

As you can see, this was a big hit with D. I needed a different idea for something for breakfast. I decided to use a play off of baked oatmeal. I used the Bob’s Red Mill Mighty Tasty GF Hot Cereal instead of oatmeal. Ingredients: 1/2 C butter, melted1 C brown sugar3 C Mighty Tasty GF Hot Cereal (or oatmeal)1 1/2 C milk w/2 tsp lemon juice (or yogurt or buttermilk)1 tsp cinnamon2 eggs, beaten2 tsp baking powder1 tsp saltOptional: raisins, nuts, chopped apples… Directions:1. Spring Reading Thing 2007: Wrap Up

It’s hard to believe, but the Spring Reading Thing 2007 has come to a close. I was trying to think about what book I enjoyed the most this spring. I would have to say that I really enjoyed the Excellent Wife. Now, I’ve read this book before several years ago, but I wanted to re-read it. My new author is Elizabeth George (Christian book author). I thoroughly enjoyed her books, and will continue to read the rest of her books as time allows. We ended up not making it through the Narnia series. We took a break and will start…

Thankful Thursday: Nature

This week, as I thought about my Thankful Thursday post, I looked around the yard and saw the beauty of the Lord’s creation. How can anyone not believe in God after looking at His wonderful creations. I am grateful that the Lord not only takes care of our needs, but also makes things beautiful for us to look at. I am grateful that food not only nourishes us, but it also tastes wonderful. I am grateful that I can hear the beautiful sounds of nature around me.
