We use to get these delicious sweet potato muffins at my favorite seafood place when we were in NC. Well, being too far away to go there now, I wanted to find a recipe for something similar to these muffins. I couldn’t find exactly what I wanted, so I looked at the basic ingredients from several different recipes and made up my own. This Thanksgiving, I gave these a try and they were a hit with everyone.
Ingredients:
1 1/2 C flour
1 tsp nutmeg
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1 C brown sugar
2 eggs
1/2 C vegetable oil (or preferred oil)
2 Tbsp evaporated milk
1 C mashed yams
Mix dry ingredients. Stir in sugar, eggs, oil, and milk. Stir in mashed yams. Grease muffin tins and fill 3/4 full. Bake for approximately 15 minutes. Cool in pan.
**Note: these freeze well, so go ahead and make a double or triple batch.**
