What are frozen assets? Frozen assets are meals, baked goods, or other things that you prepare ahead of time and put in the freezer. Today, I’ll tell you some of the things that I do for my husband’s lunch. I’m going to be honest and say that I’m not getting up when he gets up, but I still want to prepare good lunches for him to take to work with him. So, I tried to think of different things that I could send for lunch.
Originally, I started making extra of whatever I was preparing for supper (spaghetti, lasagna, mac ‘n cheese, meatloaf…) and creating tv dinners for him. I put them in Tupperware’s Rock ‘n Serve containers. That way he could take the meal directly from the freezer to the microwave. He loved these, but he was missing sandwiches.
He’s not a morning person, so he’s usually running behind in the mornings. Which means that making his own sandwiches is not an option. He’d have to think in advance if he wanted me to make him sandwiches the night before. I came up with a way to make sandwiches frozen assets.
I prepare at least 2 different types of sandwiches and make a large batch (at least 12-15 of each type). The key to the sandwich not getting soggy — make sure the condiment (like mustard) is not on the bread but sandwiched between the meat and the cheese. Also, with pb&j spread peanut butter on both pieces of bread and put the jelly between. Just wrap them up in aluminum foil and label. If you put them in the lunch in the morning, they will be thawed by lunchtime.
By making up these sandwiches ahead of time, he can chose between a hot lunch (one of the previously prepared meals) or sandwiches. He can also take things based upon how hungry he is that particular day. We’re both happy!!
