Fresh Summer Salsa

Tonight I tried my hand at homemade salsa, and even Munchkin liked it. So, it was obviously a hit at our house. It’s really simple. Ingredients: 1 Half Large Sweet Onion 6 Roma Tomatoes 1 Green Pepper 1 Half Red Pepper 1 Half Yellow Pepper 1 Medium Cucumber 3 Tbsp Lemon Juice You can either finely chop everything by hand or you can use a chopper to dice everything. On Wednesday, we headed over to a local berry “farm” (or so we thought). It turned out to be a field on the side of the road, but we didn’t care as the strawberries were very tasty. We picked 3 very full buckets of strawberries. We enjoyed just eating them fresh and with some whipped cream. D enjoyed them on his cereal. Now these aren’t truly popovers, but it’s what we’ve always called them. This is something that I came up with when my husband and I were first married, and they were a hit.
