Gluten Free Peanut Butter Bars

Naturally Gluten Free Peanut Butter Bars

Munchkin and D love Reese’s peanut butter cups, and their favorite kinds are the specialty ones at the holidays as there is more peanut butter in those. Yesterday, I got to thinking about some peanut butter bars that my mom use to make. I decided to change them up a little as the original bars are not gluten free due to the recipe calling for graham cracker crumbs. The result was absolutely delicious.

Gluten Free Peanut Butter Bars Recipe

Ingredients:

  • 2 cups almond flour
  • 1 cup butter (I used salted as I wanted some of that saltiness)
  • 1 cup peanut butter
  • 2 cups powdered sugar
  • 1 cup chocolate chips
  • 4 tbsp peanut butter

Directions:

  1. Melt butter in microwave safe mixing bowl or on stove.
  2. Stir almond flour into the melted butter and mix until thoroughly combined.
  3. Add in peanut butter and stir until thoroughly combined.
  4. Sift powdered sugar into mixture and mix until thoroughly combined.*
  5. Prepare 9 x 13 pan (grease with butter or line)
  6. Evenly press peanut butter mixture into pan.
  7. In a microwave safe bowl (or over double boiler) combine chocolate chips and 4 tbsp of peanut butter. Microwave at 30 second increments – mixing after each increment – until chocolate mixture is smooth.
  8. Pour chocolate over peanut butter mixture. Evenly spread chocolate to cover peanut butter mixture.
  9. Place in refrigerator for 1 hr to set.
  10. Cut into small squares and serve. Store in airtight container.

*Don’t forget to sift the powdered sugar or you’ll end up with some lumps. I was quickly whipping these up and forgot to sift, so I had a few lumps in this batch which you can see in the above picture.

    • lol! If you’re not gluten free, you can just substitute finely ground graham cracker crumbs for the almond flour (aka finely ground almonds).

  2. Do you have any suggestions for another gluten-free flour that I could substitute? We’re nut-free as well as gluten-free, and I’d love to try this with sunbutter. Maybe I’ll just try with my all-purpose flour blend of millet, sorghum, and starch.

    • Since the original recipe that my mom used called for graham crackers, I decided to use almond flour because I knew it had a similar texture and great taste. I’m not sure about using a different gf flour with it. If you try it, you’re going to want to use a very mild gf flour so it doesn’t overpower the delicate sunbutter flavor.
