Gluten Free No-Cook Cranberry Relish

My mom use to make this no-cook cranberry relish for us.  I never did find her old recipe, so I just recreated it from memory.  We do have a funny story to go along with this one.  When my sister and I were younger, my mom decided to allow us to help with making the cranberry relish.  She had one of the old grinders that you fastened to a table.  We started putting the ingredients into the grinder and turning the handle.  I’m not exactly sure what happened next, but before we knew it, there was cranberry relish all over the place.  Honestly, I can’t remember my mom’s reaction, but I’m sure she wasn’t all that happy since the relish was on the carpet.  Thankfully, even with mishaps like that, my mom still allowed us to help out in the kitchen.

Cranberry Relish

Gluten Free No-Cook Cranberry Relish Recipe

Ingredients:

  • 1 10 oz. package of cranberries (preferably organic)
  • 2 medium oranges (preferably organic)
  • 2 medium to large apples (your choice, preferably organic)
  • 1/2 – 1 cup sugar (depends on sweetness of other ingredients and your taste preference)

Directions:

  1. Thoroughly clean everything.  Since you will be using the orange peal, you will want them very clean.
  2. Peal the apples and dice.  Place in a bowl.
  3. Zest the orange.  Place zest in the bowl.  Roughly slice and dice the oranges.  Place in bowl.
  4. Place cranberries in food processor or blender and do a coarse chop.  Place in bowl.
  5. Sprinkle the cranberry mixture with sugar.  Slowly add more sugar if necessary.  You can always add more sugar, but you can’t take it out.
  6. Cover and refrigerate over night.  All of the flavors will come together and the sugar will help make the mixture more juicy and flavorful.
