Project 365 – #260 I hadn’t gotten anything out for dinner, and everyone was hungry.  I started digging in the freezer to see what we had available.  I was happy to find some frozen turkey burgers as they make a quick, easy meal.  While I was in the freezer, I pulled out some mixed veggies to serve with the burgers.  Frozen burgers go directly in the hot cast iron skillet while I slice up the onions and cheese. Project 365 – #227 Crockpot “Roast” Chicken is a super easy, quick meal that takes very little thought or preparation.  I literally take the whole chicken out of the freezer and put it in the crockpot around lunch time.  I season it generously with whatever seasoning I feel like using.  (I used Emeril’s seasoning blend for this chicken.)  To have the frozen chicken ready by dinner, I put the crockpot on medium or high.  If you want a crispy skin, you can place the cooked bird in the oven for 20-30 minutes prior to serving.  The chicken will fall right…

Project 365 – #174 The crockpot is definitely my friend when I’m not feeling well.  I can toss all of the ingredients into the pot and pretty much forget about it.  Last night, I tossed in a pound of ground chicken, 2 cans of organic multi-color beans, 1 can of organic tomato sauce, 1/2 jar of roasted green chili sauce, 3 large organic tomatoes diced, and some seasonings.  (Basically, I looked into the fridge and pantry to see what we had on hand and dumped it into the crockpot.) Project 365 – #070 A simple, but flavorful dish created using the Bagel Spice seasoning that we received to review.  We’re having a blast testing out the seasoning.  Yum!  For this dish, I just sprinkled the Bagel Spice seasoning on the boneless skinless chicken breast right before grilling.   Review of the Bagel Spice seasoning line coming soon. One night this past week, I needed something quick and easy to make for dinner.  I checked in the pantry and fridge to see what I had available.  I came up with these tacos, and they ended up being such a huge hit that they were requested again the next day.  You could easy add more veggies of your choice.
