Our neighbor was looking for a recipe for grain free tortillas, so I decided to try to come up with something using coconut flour that would work. What do you do when you have lots of delicious, sweet, ripe strawberries? You start incorporating them into a variety of dishes. I had already planned on making boneless, skinless chicken breasts for dinner, so I decided to add some balsamic strawberries sweetened with honey as a punch of flavor. It’s late morning on Saturday, and Munchkin is hungry. Knowing that I’m trying to eat dairy and grain-free right now, I wanted to create a dish that would fill us up without including the unwanted ingredients. Right now, I’m trying to detox my body which means that I’m not eating sugar or dairy. I’m also eating very few grains.
