My recipe for a semi-homemade version of gluten free buttermilk drop biscuits. This is my easy go-to biscuit base when I don’t feel like mixing up various flours. Ingredients: 2 Cups Pamela’s Baking Mix 1 Stick of butter 2/3 Cup buttermilk Directions: Cut butter into baking mix until thoroughly combine; pea sized pieces of butter Add buttermilk and mix until thoroughly combine. GF Chicken Pot Pie ~ Leftovers

What do you do when you have leftover chicken (or turkey) and don’t feel like eating it by itself?  Well, I make some gluten free chicken pot pie.  This is one of those throw together recipes, so I do not have exact measurements. I toss together 2-3 cups of shredded chicken and 2 cups of frozen veggies (or leftover veggies from the fridge).  For the gravy, I place 2 cups of chicken or veggie stock in a sauce pan and bring to a boil.  Slowly add in 2-4 Tbsp of potato flour stirring constantly to avoid lumps.  Once the gravy…

Hot Cheesy Chicken Dip

One Sunday evening, I needed to come up with a quick, easy meal for us. Since we were low on groceries, I looked around to see what was available, and this is what I came up with for dinner. All you need is one 13 oz can of chicken breast, one 8 oz package of cream cheese, one cup of shredded pepper jack cheese (or other cheese of your choice), and one cup of sour cream.  Mix all ingredients together (reserving about 1/4 cup of shredded cheese).  Place in baking dish and top with reserved cheese.  Bake at 350 degrees…

Chocolate Covered Strawberries

For Valentine’s Day, I wanted to have a special dessert, but I didn’t have the time to bake anything that day.  I thought it would be fun to have some chocolate covered strawberries.  We’ve had store purchased chocolate covered strawberries before, but they’re rarely very good plus they are usually quite expensive.  We had to stop and get milk at the grocery store, so we picked up a container of strawberries for $2.50.
