A Lovely Thanksgiving Day

We had a lovely Thanksgiving Day filled with fun, food, family, and relaxing.  I got up early to get the turkeys in the oven.  While I totally enjoy preparing a full feast for my family, I do not enjoy getting up early. lol!  Soon the house was filled with the tantalizing aroma of herb roasted turkey and all of the fixings. As we celebrate the national holiday of Thanksgiving, may we truly be thankful in our hearts.  I am thankful for every person who reads this blog.  I am thankful for all of my online and real life friends who support me and my family.  I am thankful for the many blessings that the Lord has bestowed upon us including the bountiful table at which we will be sitting today.  May you all have a wonderful Thanksgiving! A Productive Pre-Thanksgiving Day

As the day winds down, I am grateful that we had a very productive day.  I was actually able to eat a little today, so that is definitely something to be thankful for.  I was able to get most of the meal ready for tomorrow.  The turkeys are in the brine, so they’ll be ready for the oven in the morning.  I’m also thankful that Munchkin offered to help again by making delicious gluten free sweet potato muffins. Gluten Free Herb Stuffing

One of the Thanksgiving staples that I’ve had the most difficulty replacing would be good old fashioned herb stuffing/dressing (think a better stove top dressing.)  After many different trial and error sessions over the last couple of years, I’ve finally been able to create a delicious replacement.  We cook our stuffing outside of the bird, so I guess it’s technically called dressing. More Thanksgiving Baking for Munchkin

Today, Munchkin tackled making gluten free sweet potato muffins.  She decided to do a double batch since we like them so much.  The muffins turned out great.  Mmmm…. delicious! Munchkin is turning into quite the little baker.  I’m having so much fun teaching her how to bake and seeing her enjoyment as she accomplishes baking delicious treats.  She was grinning from ear to ear when Daddy promptly claimed all of the muffins because they were so good.  **grin**
