Yum, peanut butter cookies… Around here, we enjoy our sweets. I knew that going gluten-free may mean some changes, but I didn’t want it to have to be a horrible change. Off I went in search of some easy, yummy sweets. I stumbled across a recipe for flourless peanut butter cookies. Flourless Peanut Butter Cookies 1 Cup Peanut Butter (crunchy or creamy is fine)1 Cup Sugar1 Egg1 tsp baking powder Cream together the ingredients until smooth. Tackle It Tuesday: Gluten Free Kitchen

This week’s tackle is an interesting tackle (at least for me). Since we’re going gluten-free at our house, I need to go through the fridge, freezer, and pantry to pull all non-safe foods. Eventually, our whole house will be completely gluten-free, but for now, I need to move all that unsafe stuff out of the kitchen. D will then be able to grab whatever out of the fridge, freezer, or pantry and know that it’s safe. We’re doing whatever possible to make life easier for him. I won’t be throwing out the food. I haven’t participated in Meal Plan Monday for a while now, but it’s time to get back in the swing of things. D is starting a gluten-free diet, so menu planning is going to be critical (especially until we get the hang of things). I was in the mood for something different and light for dinner tonight. Since I just made a new batch of salsa, I decided that I wanted to do something with chicken and salsa. Here’s what I came up with: Summer Wraps Ingredients: Romaine LettuceFresh Summer SalsaFried or Grilled ChickenRanch DressingShredded Cheese Directions: Lay down romaine lettuce leaves (whole leaves) on the plate. Drizzle lightly with ranch dressing. Place hot chicken in slices or bite size chunks on the lettuce bed. Top with shredded cheese and salsa. These can also be rolled up and eaten as tacos.
