Summer Wraps

I was in the mood for something different and light for dinner tonight. Since I just made a new batch of salsa, I decided that I wanted to do something with chicken and salsa. Here’s what I came up with:

Summer Wraps

Ingredients:

Romaine Lettuce
Fresh Summer Salsa
Fried or Grilled Chicken
Ranch Dressing
Shredded Cheese

Directions:

Lay down romaine lettuce leaves (whole leaves) on the plate. Drizzle lightly with ranch dressing. Place hot chicken in slices or bite size chunks on the lettuce bed. Top with shredded cheese and salsa.

These can also be rolled up and eaten as tacos. Just use the lettuce instead of a taco shell.

My daughter and husband already told me that we need to do this again as they really enjoyed it. It was really hot out, so this was light, refreshing, and filling. Sorry about not having a picture; they were eaten too fast!
