Gluten Free Carrot Cake Cupcakes

Posted in Gluten Free, Homemaking, and Photography

Project 365 – #078 On Sunday afternoon, we’re heading over to a birthday party.  Since I prefer Munchkin doesn’t have to do without a tasty cupcake when the other kiddos are eating their birthday cake/cupcakes, I made some gluten free cupcakes to take with us. We had picked up a Simply Organic Gluten Free Carrot Cake mix at some point the last few months, and it’s been sitting in the pantry waiting to be used.  I thought this would be a great time to make Munchkin’s favorite type of cake. Last time I used the mix, I found that the…

Gluten Free Bagel Spice Grilled Chicken

Posted in Gluten Free, Homemaking, and Photography

Project 365 – #070 A simple, but flavorful dish created using the Bagel Spice seasoning that we received to review.  We’re having a blast testing out the seasoning.  Yum!  For this dish, I just sprinkled the Bagel Spice seasoning on the boneless skinless chicken breast right before grilling.   Review of the Bagel Spice seasoning line coming soon. I received a sample of Bagel Spice for the purpose of the review. No monetary compensation was received. All opinions are my own.

Gluten Free Veggie Tacos

Posted in Gluten Free, Homemaking, and Photography

One night this past week, I needed something quick and easy to make for dinner.  I checked in the pantry and fridge to see what I had available.  I came up with these tacos, and they ended up being such a huge hit that they were requested again the next day.  You could easy add more veggies of your choice. Project 365 – #067 Gluten Free Veggie Taco Recipe Ingredients: Guacamole (I used Wholly Guacamole) Refried Beans (vegetarian version) Sour Cream Lettuce (shredded) Tomatoes (diced) White Corn Tortillas Cheese (optional) Other veggies (finely diced, optional) Directions: Heat up skillet to…

Project 365 – #059 When I was younger, I had many different dreams of what I wanted to be when I grew up.  Everything revolved around animals.  I adored animals – especially dogs.  I was one of those kids who would go up to any dog – stray or not – and try to pet it.  This didn’t go away as I got older.  Even after having been bit, I had no fear of dogs.  I thought it would be great to be a vet and take care of animals. As time went along, I found that I wasn’t all…

Polymer Gifts for Friends

Posted in Homemaking, and Photography

Project 365 – #055 For Valentine’s Day this year, Munchkin decided that she wanted to make something special for her friends.  Seeing how she was having so much fun with the polymer clay roses, she decided to keep with the polymer clay theme. She created some crazy creatures (notice the heart in it’s mouth) and these lovely heart necklaces.  I just adore her creativity. My favorite part is that she did this all on her own.  The only role I played in her creation was baking the clay pieces.  While I very much enjoy doing things with her, I’ve found…
