Happy Mother’s Day!

Posted in Family, and Holidays

Munchkin is getting so big.  While you can’t tell it in this picture taken on Easter Sunday, she’s nearly as tall as me now.  She’s growing physically, mentally, and spiritually.  She is truly a blessing to me.  I am so grateful that the Lord trusted us with this precious child.  Children truly are a gift from God. Happy Mother’s Day!!

Munchkin’s 11th Birthday Party

Posted in Family, Holidays, and Homemaking

Munchkin hasn’t had a big birthday party for herself since she was in kindergarten, so we decided this was a good year to have a big party.  Munchkin has been blessed with great friends at this location, so we wanted to take advantage of that before people start moving away. Let me introduce you to Sahara, Munchkin’s birthday camel.  Instead of a traditional card from Mommy and Daddy, we gave this to Munchkin.  She received her birthday camel as well as her other presents from family prior to us heading to church on Sunday morning. We tried to do most…

Crispy Rice Baskets for Easter

Posted in Gluten Free, and Holidays

These start off with the traditional recipe – 3 Tbsp butter, 1 package large marshmallows, and 6 cups rice cereal (I used gluten free Koala Crisp cereal – chocolate crispy rice). Prepare as usual – melt butter over low heat until melted, stir in marshmallows until completely melted, remove from heat and add cereal, stir until cereal is completely mixed in. Grease some muffin tins (I greased with coconut oil) and add cereal mixture.  Make a well in the top, so you can “fill” the basket. For the green, I used green marshmallows as Munchkin doesn’t like coconut.  I added…

Chocolate Covered Strawberries

Posted in Gluten Free, Holidays, and Homemaking

For Valentine’s Day, I wanted to have a special dessert, but I didn’t have the time to bake anything that day.  I thought it would be fun to have some chocolate covered strawberries.  We’ve had store purchased chocolate covered strawberries before, but they’re rarely very good plus they are usually quite expensive.  We had to stop and get milk at the grocery store, so we picked up a container of strawberries for $2.50. I placed about 1 cup of chocolate chips and 1 Tbsp of coconut oil in a microwave safe bowl.  I microwaved at 30 second intervals, stirring after…

Our Valentine’s Day 2010

Posted in Holidays

Munchkin and D had fallen asleep on Saturday night.  I slipped downstairs and starting preparing their surprise breakfast, gluten free cinnamon raisin biscuits.  I tinted the frosting pink just for fun.  (Munchkin declared the next day that they tasted like a cross between biscuits and cinnamon rolls.) As the biscuits were baking, I began to decorate for Valentine’s Day.  Neither D nor Munchkin expected to find anything on Sunday morning, but this is what they saw… Wanting to add a little fun to our plain light over the table, I hung balloons with pom, pom ribbon.  I always pick up…
