Project 365 – #136 We have some apples around the house that are a little too ripe for just eating, but they’re perfectly fine for baking. I decided to make some gluten free apple cinnamon muffins with those apples. Project 365 – #132 Yes, I’ve been writing a good bit about food lately, but I’ve been rather tired and food is a constant in our life.  **wink**  On days when I have headaches, like today, I like to go with simple meals.  One of our easy go-to meals is nachos.  Since we had lots of veggies on hand, I decided to load up the nachos with lettuce, tomatoes, onions, and green peppers.  They were very tasty, and both Munchkin and D enjoyed their meals.  I was happy because I was able to provide a good meal with minimal work…
