Gluten Free Strawberry Shortcake

Posted in Gluten Free, Homemaking, and Photography

We finally found some delicious, well-priced strawberries at the store which means it’s time for the first strawberry shortcake of the season. This year, I decided that I would sprinkle vanilla coconut sugar on the strawberries instead of regular sugar. We all enjoyed that extra punch of flavor the vanilla sugar added to the strawberries. While whipped cream in a spray can may be easier, the truth is that nothing tastes as good as freshly made whipped cream made from heavy whipping cream. The shortcakes were moist and tasted great even when we ran out of strawberries. Gluten Free Strawberry…

Gluten Free Cinnamon Raisin Biscuits with Orange Icing

Posted in Gluten Free, and Homemaking

Time for a tasty treat that works well for breakfast or just a snack. While the biscuits themselves are not really sweet, adding the icing does up the sweetness factor. Gluten Free Cinnamon Raisin Biscuits with Orange Icing Ingredients: 3 cups Pamela’s Baking Mix 1 cup vanilla almond milk (I used shelf-stable Silk brand) 3/4 cup butter, melted 1/4 cup coconut sugar 2 Tbsp cinnamon 1/2 cup raisins (I used 1/4 golden raisins and 1/4 cup regular raisins.) 1/4 cup powdered sugar orange juice 1/4 tsp vanilla Directions: Preheat oven to 375 degrees F In a large mixing bowl, combine…

Gluten Free Peanut Butter Bars

Posted in Gluten Free, Homemaking, and Photography

Munchkin and D love Reese’s peanut butter cups, and their favorite kinds are the specialty ones at the holidays as there is more peanut butter in those. Yesterday, I got to thinking about some peanut butter bars that my mom use to make. I decided to change them up a little as the original bars are not gluten free due to the recipe calling for graham cracker crumbs. The result was absolutely delicious. Gluten Free Peanut Butter Bars Recipe Ingredients: 2 cups almond flour 1 cup butter (I used salted as I wanted some of that saltiness) 1 cup peanut…

Gluten Free Baked Chicken Parmesan

Posted in Gluten Free, Homemaking, and Photography

This version of Gluten Free Baked Chicken Parmesan is easy as it requires no breading. I do everything in a single cast iron skillet which makes clean-up much faster. If you have a bigger family, you’ll want to transfer the chicken to a baking dish once you’ve seared the chicken instead of keeping it in the cast iron skillet. Ingredients: 1 boneless skinless chicken breast per person 1/2 cup sauce for each person 1/8 – 1/2 cup shredded Parmesan cheese for each person seasoning (I use oregano, basil, garlic powder) Directions: Preheat oven to 350 degrees. Preheat cast iron skillet…

Gluten Free Dark Chocolate Popcorn

Posted in Gluten Free

Salty ~ Sweet ~ Crunchy While it may sound a little odd, chocolate popcorn is really good, and it’s easy to make. For this batch, I made a tasty dark chocolate popcorn. I did use a higher quality chocolate as I wanted it to be special for our Valentine’s Day treat. I like the bitterness of dark chocolate mixed with the salty, crunchy popcorn. As you’re deciding which type of chocolate to use for your chocolate popcorn, you’ll want to keep in mind the taste preferences of those who will be eating the chocolate popcorn. Munchkin isn’t a big dark…
