Thankful Thursday: Support

As I sat watching the Olympics, I thought about all of the support that these athletes needed to get to where they were at right now.  They needed family, friends, coaches, and colleges supporting them each step of the way.  They needed dedication and perseverance as they strove to accomplish their goal.  Shaun White didn’t stomp 2 runs and win the gold by sitting around idly watching others.  He was out there working hard. Chocolate Covered Strawberries

For Valentine’s Day, I wanted to have a special dessert, but I didn’t have the time to bake anything that day.  I thought it would be fun to have some chocolate covered strawberries.  We’ve had store purchased chocolate covered strawberries before, but they’re rarely very good plus they are usually quite expensive.  We had to stop and get milk at the grocery store, so we picked up a container of strawberries for $2.50. I placed about 1 cup of chocolate chips and 1 Tbsp of coconut oil in a microwave safe bowl.  I microwaved at 30 second intervals, stirring after…
