Munchkin’s Birthday Cake

As I had stated before, Munchkin requested a carrot cake for her birthday.  I was unable to get my hands on my normal gluten free carrot cake mix (Simply Organic), so I tried a recipe that I found while at the gluten free expo.  The cake tasted good, but was a bit more dense and dry than I prefer.  I think I’ll keep trying for a better gluten free carrot cake from scratch.

Munchkin’s current favorite color is blue, so I went with blue candles.  She was excited to the look of the cake as she thought it looked fancy.

I’m happy that Munchkin is enjoying her birthday cake, and that she had a great birthday weekend.

  4. Happy Birthday Munchkin! Both my boys have April birthdays and my oldest also turned 12. Hope your husband’s surgery and hospital stay went well.
