Works for Me Wednesday: Cookies

Yum, peanut butter cookies… Around here, we enjoy our sweets. I knew that going gluten-free may mean some changes, but I didn’t want it to have to be a horrible change. Off I went in search of some easy, yummy sweets. I stumbled across a recipe for flourless peanut butter cookies.

Flourless Peanut Butter Cookies

1 Cup Peanut Butter (crunchy or creamy is fine)
1 Cup Sugar
1 Egg
1 tsp baking powder

Cream together the ingredients until smooth. Place heaping tbsps of dough about 2 inches apart on baking sheets. Bake for 10-12 minutes at 350 degrees. Allow to cool for a few minutes on baking sheet before moving to a cooling rack.

    thanks for this recipe…. I look forward to more like it! I have used one similar, without the baking soda. I also use the Schmucker’s brand of sugar free p’butter… nothing but p’nuts in it! It is more costly than store brand sugar laden types, but worth the lack of chemicals!

    also, you may want to cream the p’butter and sugar first, then add the baking powder, then add the egg and lightly mix it in… I just find that the less I beat an egg, the fluffier the results…. just the baker in me!

    This works well for any nut butters. My dad (who can’t have peanuts or flour) makes almond butter cookies with this recipe.
