Oatmeal Cookies

Oatmeal Cookies
 
Ingredients:
3/4 C butter, softened
3/4 C white sugar
3/4 C packed light brown sugar
2 eggs
1 tsp vanilla extract
1 1/4 gluten free flour
1 tsp baking soda
3/4 tsp cinnamon
1/2 tsp salt
2 3/4 C gluten free rolled oats
1 C raisins or other dried fruit
Directions:
1. Preheat oven to 375 degrees F.
2. In large bowl, cream together butter, white sugar, and brown sugar until smooth
3. Beat in eggs and vanilla until fluffy
4. In different bowl, stir together flour, baking soda, cinnamon, and salt
5. Gradually beat in dry ingredients into butter mixture
6. Stir in oats and raisins
7. Drop by teaspoonfuls onto ungreased cookie sheet
8. Bake 8-10 minutes until golden brown
9. Cool slightly; place on wire cooling rack
10. Cool completely
 
These also make excellent ice cream sandwiches.  While the cookies are cooling, soften some vanilla ice cream.  Once the cookies are completely cooled, put a scoop of ice cream between to cookies.  Wrap in plastic wrap and freeze until ice cream is solid again.
