One of the things that I miss about living where there are seasons is the fall colors and the crisp autumn breezes. Over the last year, we’ve watched Munchkin’s focus slowly shift from dinosaurs and paleontology to horses. She liked the idea of being a paleontologist, but the reality wasn’t something that she truly wanted to try to do. With horses, she definitely likes the idea of working with horses. I wanted to try a different dessert that wouldn’t feel heavy, but would taste delicious. I wasn’t sure how Munchkin would feel about it since she’s not really big on coconut, but it turns out that she enjoyed it. Gluten Free Coconut Cake Recipe Ingredients: 1 gluten free yellow cake* 1 cup coconut milk 2 Tbsp honey 1 1/2 cup heavy whipping cream 1/4 cup powdered sugar 1 tsp pure vanilla extract 1 cup unsweetened shredded coconut, toasted Directions: Poke holes in cooled yellow cake (still in pan). Munchkin really enjoys horseback riding, and she certainly loves horses. A good bit of her time is spent learning about horses and playing with her Schleich horses. Yes, D’s horse is a bit small for him, and his stirrups were more than a tad short. lol! Poor guy.
