Project 365 – #146 For D’s first official day back to work, I decided to make up some apple cinnamon pancakes. To make them just a little more special, I took some of our juicy blackberries and created a puree. First, I tossed a couple of cups of blackberries into the blender. I added roughly 1/4 cup of orange juice and a little honey for sweetener. Once it was all nicely blended, I placed it in a small sauce pan to warm it up. It turned out quite well. Grilled Corn

Project 365 -#145 Today, I fired up the grill to grill some fresh corn and cajun boneless, skinless chicken breasts. I also made some cajun seasoned butter to put on the corn. It was delicious. In fact, Munchkin and D enjoyed the corn so much that we’ll probably have more tomorrow. I just need to get some more butter as we’re completely out of butter. lol! D had a follow-up appointment today. While the surgery went well, it’s not taking care of all of the pain. Next week, he’ll have to head in for back injections. There may be another…

Grilled Cajun Chicken with Apricot Salad

Project 365 – #143 On Saturday evening, we decided to enjoy some of our new produce. D likes to have meat on his salad, so I did a Cajun dry rub on some boneless skinless chicken breasts and grilled them. I sliced up two of the chicken breasts to add to our salad, and I saved another chicken breast for Sunday’s lunch, grilled Cajun chicken sandwiches. I shredded the lettuce, diced the tomatoes, and shaved some raw cheddar cheese. We received some beautiful apricots in our Bountiful Baskets order, so I sliced up a few of them for our salad. …
