Grilled Cajun Chicken with Apricot SaladProject 365 – #143

On Saturday evening, we decided to enjoy some of our new produce.  D likes to have meat on his salad, so I did a Cajun dry rub on some boneless skinless chicken breasts and grilled them.  I sliced up two of the chicken breasts to add to our salad, and I saved another chicken breast for Sunday’s lunch, grilled Cajun chicken sandwiches.  I shredded the lettuce, diced the tomatoes, and shaved some raw cheddar cheese.  We received some beautiful apricots in our Bountiful Baskets order, so I sliced up a few of them for our salad.  Munchkin mixed up some homemade pepper ranch dressing to top off the salad.

Munchkin quickly learned that she really liked apricots and asked for more to just eat.

    • It was a mild Cajun as my daughter doesn’t care for really spicy foods. 🙂 The apricot and ranch dressing also cool down the heat.
