Baking Day: Gluten Free Chocolate Cupcakes

When Munchkin is working on a recipe, I always encourage her to set out all of the ingredients that she will need prior to starting her baking/cooking.  This helps her read the instructions and allows her to check to make sure that she has everything that she needs prior to starting the whole process. Wednesday, she tackled making gluten free chocolate cupcakes from scratch.  She also make the homemade buttercream frosting from scratch.  She’s been getting much better at understanding and following the directions.  I’m really pleased with how the cupcakes turned out.  Yum! Cupcakes, Cupcakes Everywhere

Cupcakes here ~ Cupcakes there Project 365 – #034 Yesterday, we had a good bit of fun making and decorating cupcakes.  After we finished making the cupcakes, Munchkin headed next door to see if her friend was available to play.  They were going to play outside, but the temperatures have dropped here.  (Nothing like many parts of the country are dealing with right now, but quite chilly for us.)  I told them that they could play upstairs instead. Say goodbye to everyday cupcakes and hello to eye-catching, fun cupcakes. Hiking Equipment

Project 365 – #033 The right equipment makes hiking so much easier.  Of course, being in shape also helps when you’re out hiking.  **grin**  For my birthday, D gave me these new hiking boots (Merrell Moab Mid GORE-TEX® XCR®).  For Christmas, D and Munchkin gave me these Leki hiking poles.  I’ve never used hiking poles, and I was pleasantly surprised at how much I enjoyed using them last week while we were hiking.  The other gear that is essential here is a good water hydration system.  I have a nice Camelbak daypack that D purchased for me a few years…
