Peanut Butter Oatmeal Bars Ingredients: 1 cup gluten-free flour 1 cup gluten free oats 2/3 cup brown sugar 1/4 teaspoon baking soda 1/2 cup butter 1 cup peanut butter Directions: In a mixing bowl combine gluten free flour, gluten free oats, brown sugar and baking soda. Cut in butter till mixture resembles coarse crumbs. Reserve 1 cup of the flour mixture. Press remaining flour mixture into the bottom of an ungreased 8×8 pan. Spread with peanut butter. I have a stack of books that I need to read (and review),  so today, while Munchkin played, I sat down and read.  I read for several hours.  It was fun to relax and just read as I really enjoy being able to get into a good book. Today, I was focusing on a book series for Munchkin.  I like to screen books when possible for Munchkin.  Since I’m a fast reader, I’m normally able to get through one of her books in an hour or two.  It’s sad how much garbage is out there for kids to read.  Thankfully,…
