Crisp Evening Air

Last night, as I was getting ready to fall asleep, our “puppy” decided that he needed to go out. I didn’t want to get up as I was comfy in bed, but I got up and went downstairs. Sweet Potato/Pumpkin Loaf Cake

While I like the idea of the pumpkin roll, I wanted something a little easier to make.  I decided to take my recipe for sweet potato muffins and put it in a loaf pan.  If you prefer pumpkin, you can just substitute pumpkin puree for the sweet potato puree.  For the loaf, use the sweet potato muffin recipe.  Place in loaf pans instead of muffin cups.  Cook approximately 30 minutes or until the toothpick comes out clean when inserted.  Allow to cool completely before cutting into layers. The Gift of Giving

Have you ever noticed that when you give of yourself or give a gift from the heart, you, the giver, benefit? Today, we finished wrapping up more shoe boxes for Operation Christmas Child. Munchkin joyfully wrote letters to include in each of the shoe boxes hoping that just maybe she’ll get a response from one of the recipients. She would think about how the child would feel about each of the items placed in the boxes.
