Mexican Lasagna

Gluten Free Mexican Lasagna is a quick, easy meal for a busy weekday.

Weeknights can be busy with family members heading in all different directions for their activities, work, and school. I’m always trying to come up with ideas for quick, easy, flavor-filled meals. We really enjoy the flavor of Mexican food, so I came up with this recipe for Mexican lasagna to use up some ingredients that I already had on hand.

Mexican lasagna takes the idea of a traditional lasagna and adds a Mexican twist. Noodles are replaced with corn tortillas. Marinara sauce is replaced with taco sauce or salsa. The spiciness of the dish will depend on the ingredients that you use which means it’s easy to customize to your family’s taste preference.

Begin the process by browning up some ground chicken or ground grass-fed beef. I like to add roughly chopped onions to the meat. Season with your favorite taco seasoning.

While the oven is preheating, start assembling the Mexican lasagna in a large glass baking dish. Begin the basic layering process – a layer of tortillas, a layer of seasoned meat, a layer of tortillas, a layer of beans, and a layer of taco sauce or salsa. You can repeat this process more than once if you have a deep dish. Top the layers with cheese and black olives (if desired). If your family really likes cheese, you’ll add cheese to each layer rather than just on the top layer.

Gluten Free Mexican Lasagna is a fun twist on traditional lasagna. It's perfect for busy weeknights. It's also a great dish for kids in the kitchen.

After you’ve completed all of the layers, place the Mexican lasagna into the oven and bake until cheese is melted and bubbly. (D likes his to be a little brown on the top. Munchkin doesn’t want anything to do with browned cheese. Sometimes, I’ll remove half of the dish and bake the other half a little longer to achieve the browned cheese that D enjoys.) Since everything is already cooked, baking the dish is all about the gooey cheese.

You can serve with sour cream, salsa, tomatoes, green peppers, onions, jalapenos, and/or guacamole. Basically, your toppings are the same as your favorite taco toppings.

Mexican lasagna is a great dish for getting the kids involved in the kitchen as they can help with the assembly of the dish. With a little help (depending on their age), they can prepare the meal from start to finish. It often takes longer when the kids help, but it’s worth it as it helps them work on their life skills.

Ingredients

  • 1-2 C your favorite cheese*
  • 1 can of refried beans, ground chick peas, or ground pinto beans
  • 1-2 C seasoned, browned ground chicken**
  • 4-6 black olives, sliced (optional)
  • Taco Sauce
  • Corn Tortillas

Instructions

  1. Preheat oven to 350 degrees F
  2. Place tortillas on bottom of baking dish
  3. Top tortillas with seasoned, browned ground chicken
  4. Place another layer of tortillas on top of the chicken
  5. Spread a layer of beans on the tortillas
  6. Pour a light layer of taco sauce on the beans
  7. Top with cheese & black olives (if desired)
  8. Place in oven and bake until cheese is melted, bubbly

Notes

You can serve with sour cream, salsa, tomatoes, green peppers, onions, jalepenos, and/or guacamole.

*I usually use a mixture of pepper jack and monterey cheese.

**I add onion, cumin, chili powder, cayenne pepper (or just taco seasoning) to my ground meat.
