I was in the mood for something different and light for dinner tonight. Since I just made a new batch of salsa, I decided that I wanted to do something with chicken and salsa. Here’s what I came up with: Summer Wraps Ingredients: Romaine LettuceFresh Summer SalsaFried or Grilled ChickenRanch DressingShredded Cheese Directions: Lay down romaine lettuce leaves (whole leaves) on the plate. Thankful Thursday

It’s hard to believe, but it’s already Thursday and time for this week’s edition of Thankful Thursday. This week has had a lot of ups and downs. My posting has been infrequent due to all kinds of car issues that we’ve been dealing with over the course of a few days. I am thankful that we have 2 vehicles, so when one is having issues, we still have a means of transportation.
