Somehow, we’ve managed to get into a rut for eating while D has been gone. I think it has something to do with the fact that I don’t have my recipe binder with me, and I’m too tired to think of any sort of variety. Favorite Ingredient Friday: Popcorn Chicken

I was requested to post the recipe for the popcorn chicken that I listed on my menu for Menu Plan Monday. So here it is (this is for 2-3 people): 2-3 Raw, Chopped Chicken Breasts (can use other cuts if you prefer) 1/2 C bread crumbs (for gluten free – use crushed gf tortilla chips) 1 tsp Italian seasoning 1/4 C grated Parmesan cheese Put ingredients in Ziploc baggy and toss until coated.
