Roasted Root Vegetable Medley

Posted in Gluten Free, and Homemaking

We’ve been thoroughly enjoying our CSA boxes the last couple of weeks, but it does require some creativity to figure out how to use everything. I’m personally not a big fan of radishes or beets, so I needed to decide how to use these in a manner that we would all still enjoy them. I started thinking about how oven roasted changes the flavor of many veggies, so I decided to give it a try. I grabbed what root veggies I had on hand, but you can easily substitute whatever you have to create your own unique root veggie medley.…

Romanesco – The Alien Vegetable

Posted in Gluten Free, and Homemaking

Our organic Bountiful Baskets order for 3/2/13 was filled with all kinds of goodies this week including Romanesco, Leaf Lettuce, Baby Broccoli, Cilantro, Celery, Red Potatoes, Red Swiss Chard, Bananas, Apples, Mangoes, Grapefruit, and Blueberries. Now, I’ve never cooked Romanesco, but I read that is was kind of like cauliflower, so I started throwing together a variety of items from the basket this week as well as a few leftovers from last week. Munchkin doesn’t like them at all. D pretty much only likes them when they are roasted, but he’s still not a huge fan. I decided to do something a little different with them rather than halving them and roasting them. I started out by cutting the base off the sprouts and then removing the outer leaves. After they were washed, I sliced them instead of cutting…

Roasted Cauliflower and Broccoli

Posted in Gluten Free, and Homemaking

Today, I picked up our Bountiful Baskets order, and I have to say that the organic baskets were wonderful this week. We received broccoli, cauliflower, cherries, mangoes, donut peaches, mushrooms, corn, purple kale, baby bok choy, celery, and cantaloupe. I also got a box of pineapple. The pineapple, mangoes, and peaches aren’t ripe yet, so that will give us a chance to really dig into all the other yummy fruits. Because I really want to take advantage of all of the yummy goodies this week, I decided to make some roasted cauliflower and broccoli for lunch. It’s been some time since I’ve made…
