Homemade Fruit-on-the-Bottom Yogurt Cups

Posted in Gluten Free

It took some time, but I finally have a method of yogurt making that produces consistent results for me. I’ve decided that making plain yogurt seems to produce the best yogurt, so we just sweeten (if desired) when we eat it. From the basic yogurt, I can then strain it to make greek yogurt as well as yogurt cheese. I like to make my yogurt 2 quarts at a time as that is roughly a week’s worth of yogurt for us. Because it’s easy to make, you can easily adjust how much you make at a time. I personally like…

Gluten Free Coconut Granola

Posted in Gluten Free

If you’ve ever priced gluten free granola at the store, you know it can get pretty pricey which is a problem if you have someone in your family who really likes granola. When you have several people who like granola, you end up using granola as a garnish rather than as the main breakfast dish because it’s just too expensive. One of those store-bought bags of granola usually equals roughly 4 bowls of cereal – maybe. Since I buy gluten free oats in bulk, the cost of making oatmeal and granola goes down significantly. Gluten Free Sugar Cookie Recipe

Posted in Gluten Free

I was in the mood for some sugar cookies, but I didn’t have all of my normal sugar cookie ingredients. I decided to wing it and started throwing things together. The result was a light, thin cookie that had a crisp exterior and chewy interior. The cookies were a big hit, and they disappeared very quickly. Unfortunately, I forgot to write down all the substitutions that I made, so I was then tasked with trying to recreate the cookie. This recipe is pretty close to the original recipe that I pieced together. Munchkin wanted to try these with a little…

Crispy Oatmeal Chocolate Chip Cookies

Munchkin really wanted to have chocolate chip cookies last night, so I started throwing together some ingredients as I wanted to try something different. I mixed and combined until I arrived with a dough texture that I liked. I decided to go with a larger cookie scoop to make big cookies. The result was oatmeal flavored crispy chocolate chip cookie with a soft inside. They were easy to make and a hit. Munchkin decided they tasted like a cross between chocolate chip cookies and granola bars. I plan on trying these with dried fruit and nuts. I may even try…

Turkey Tortilla Soup with Canning Instructions

Posted in Gluten Free, Homemaking, and Homesteading

I always like to take advantage of sales on turkeys during the holidays. Although we had some craziness with our Thanksgiving turkey due to UPS not delivering the turkey in a timely manner, I did end up making extra turkey later on which meant that I had some leftover turkey to use. Chicken tortilla soup is a hit around here, so I decided to substitute turkey into the recipe and make sure it was safe for canning. While we like the soup, we didn’t want to eat it all at once. This recipe can easily be made in the crockpot,…
