Tasty Chicken Fajitas

Posted in Gluten Free, Homemaking, and Photography

Project 365 – #162 I love the aroma of peppers and onions cooking in a cast iron skillet.  Add in the sizzle of perfectly seasoned chicken breast…  Soon I hear a call from the living room, “Something smells really good!”  Mmm… While I love the ease of my confetti fajitas done in either the oven or crockpot, nothing can really beat fajitas cooked in a cast iron skillet.  The flavor is completely different. Strawberries, Strawberries, and More Strawberries

Project 365 – #158 Today was all about strawberries.  I ordered a lot of strawberries with my Bountiful Baskets order this week.  Our whole house smells like strawberries.  Yum!  Here’s a glimpse into our strawberry day…. The popcycle is simply pureed strawberries that I put in the popcycle molds.  It was a very healthy, refreshing treat on a hot afternoon.

Gluten Free Stuffed French Toast

Posted in Gluten Free, Homemaking, and Photography

Project 365 – #155 Today, I decided to make something a little different for brunch.  I had some fresh fruit from the Bountiful Baskets that I had just picked up, so I decided to incorporate some of those items into the meal.  I had some Udi’s multi-grain bread that had been left out a little too long (oops!) which meant that I needed to use that up.  I thought it would be fun to make some french toast as I haven’t made that for some time.  I wanted to make it a little special, so I went for a stuffed…
