Project 365 – #136 We have some apples around the house that are a little too ripe for just eating, but they’re perfectly fine for baking. I decided to make some gluten free apple cinnamon muffins with those apples. I just used some of Pamela’s baking mix as the base and added some cinnamon, diced apples, and a splash of almond extract to the muffin recipe on the bag. I wanted something easy and delicious. Project 365 – #133 Okay, so that’s a slight exaggeration, but it was a time consuming failure.  Let me step back in time for a moment… This evening, I decided that I’d make some Mexican chicken with a lovely cream sauce served with peas.  I put the cast iron skillet on the burner to get it nice and hot as I wanted a nice sear on the chicken.  As I waited for the pan to heat up, I started dicing onions and green peppers.  The boneless, skinless chicken breasts sizzled as I placed them into the hot skillet.  I turned…
