As we were coming home from our little desert outing on Sunday, we saw this big hot air balloon floating ahead of us.  The closer we got to home, the more we realized that it was going to go right over our house!  Now, keep in mind that we live in base housing, so having non-military aircraft (even a hot air balloon) go over our house is not the norm. Hot Cheesy Chicken Dip

One Sunday evening, I needed to come up with a quick, easy meal for us. Since we were low on groceries, I looked around to see what was available, and this is what I came up with for dinner. All you need is one 13 oz can of chicken breast, one 8 oz package of cream cheese, one cup of shredded pepper jack cheese (or other cheese of your choice), and one cup of sour cream.  Mix all ingredients together (reserving about 1/4 cup of shredded cheese).  Place in baking dish and top with reserved cheese.  Bake at 350 degrees…
