Today, we received a very nice rain storm which means Munchkin needed to head outside to play. We thought it would be fun to try latkes which are a traditional Hanukkah food. Seeing how I like to tweak recipes slightly and I had sweet potatoes on hand, I decided to do a mixture of regular fingerling potatoes and sweet potatoes. The result was delicious and more nutritious than a latke made with just regular potatoes. These easy gluten free chocolate cake cookies are one of the first cookies that I baked by myself as a kid.  You can use a homemade cake mix or a boxed mix. Ingredients: 1 gluten free chocolate cake mix 1/3 C. coconut oil 4 Tbsp. water 1 large egg 1 cup add-ins (chocolate chips, nuts, m&ms…) Directions: Preheat oven at 350 degrees.
