Gluten Free Strawberry Shortcake

We finally found some delicious, well-priced strawberries at the store which means it’s time for the first strawberry shortcake of the season. This year, I decided that I would sprinkle vanilla coconut sugar on the strawberries instead of regular sugar. We all enjoyed that extra punch of flavor the vanilla sugar added to the strawberries. While whipped cream in a spray can may be easier, the truth is that nothing tastes as good as freshly made whipped cream made from heavy whipping cream. The skies were clouded over on Saturday morning which is not normal for our area. The forecast called for rain in the afternoon – another rare occurrence here. Munchkin and D love Reese’s peanut butter cups, and their favorite kinds are the specialty ones at the holidays as there is more peanut butter in those.
