Our Marine Corps Birthday Celebration

Today, we celebrate the 234th birthday of the United States Marine Corps. I like to make this a special day for D, so I made him this cake. It’s a marble cake with peanut butter buttercream frosting. While it’s pretty basic, I think the chocolate embellishments make it a little more special. I melted down chocolate from the after Halloween sales to make the Eagle, Globe, and Anchor. Oatmeal Cookies   Ingredients: 3/4 C butter, softened 3/4 C white sugar 3/4 C packed light brown sugar 2 eggs 1 tsp vanilla extract 1 1/4 gluten free flour 1 tsp baking soda 3/4 tsp cinnamon 1/2 tsp salt 2 3/4 C gluten free rolled oats 1 C raisins or other dried fruit Directions: 1. Cheesy Salsa Crockpot Chicken Ingredients:3 Boneless Skinless Chicken Breasts1 C Salsa1/2 – 1 C Shredded Cheese1 tsp chives Directions:1. Place chicken breasts at the bottom of crockpot.2. Pour salsa over top of chicken breasts.3. Cook on low for 4-5 hours.4. 30 minutes prior to serving, sprinkle cheese on top of chicken breasts.5. Once cheese is melted, sprinkle chives on top of cheese.6. Serve with sour cream and extra salsa (if desired) This also tastes good served over rice.

Crockpot Cooking

My new crockpot with various size crocks makes cooking much easier.  During the school week (and even on weekends), I enjoy the freedom of being able to toss some ingredients in the crockpot and forget about it until supper time. The aroma of a hot meal fills the house without me having to spend hours in the kitchen.  On days when I’m not feeling well, I’m still able to offer filling hot meals to my family. Holiday Preparations

I love this time of year.  Normally, I’m seeing beautiful trees painted in glorious colors.  As the air gets cooler, we know it’s time to head to the pumpkin patch and apple orchard. This year is a little different.  We’re not watching the fall colors.  We’re not picking pumpkins or apples.  Instead, we’re watching citrus fruit being harvested.  In fact, D brought me home a huge bag of grapefruit just this week.  It’s all a little odd for someone from the East Coast that is use to regular seasons.
