Hot Cheesy Chicken Dip

Posted in Homemaking

One Sunday evening, I needed to come up with a quick, easy meal for us. Since we were low on groceries, I looked around to see what was available, and this is what I came up with for dinner. All you need is one 13 oz can of chicken breast, one 8 oz package of cream cheese, one cup of shredded pepper jack cheese (or other cheese of your choice), and one cup of sour cream.  Mix all ingredients together (reserving about 1/4 cup of shredded cheese).  Place in baking dish and top with reserved cheese.  Bake at 350 degrees…

Chocolate Covered Strawberries

Posted in Gluten Free, Holidays, and Homemaking

For Valentine’s Day, I wanted to have a special dessert, but I didn’t have the time to bake anything that day.  I thought it would be fun to have some chocolate covered strawberries.  We’ve had store purchased chocolate covered strawberries before, but they’re rarely very good plus they are usually quite expensive.  We had to stop and get milk at the grocery store, so we picked up a container of strawberries for $2.50. I placed about 1 cup of chocolate chips and 1 Tbsp of coconut oil in a microwave safe bowl.  I microwaved at 30 second intervals, stirring after…

Valentine’s Day Party and Crafts

Posted in Holidays, Homemaking, and Homeschooling

At the homeschool Valentine’s party, Munchkin and her friends had fun doing several different crafts.  The mom who pulled together all of the crafts did a great job. The Candy iPod was a huge hit.  They all decided that their new iPods played sweet music.  You can find the instructions for these here. Some of the other crafts included painting rocks, fingerprint heart cards, and heart rubbings.  The kids each made a Valentine card to be delivered to local shut-ins. They had fun passing out their Valentines to each other.  We had them line up the bags/mailboxes/boxes on the sofas,…

Sherry over at Lamp Unto My Feet posted that she was going to do the Once A Month Mom Cook Off.  It’s been a while since I’ve done Once A Month Cooking (OAMC), but I use to really like the freedom that it gave me.  So, I decided to check out what she was talking about. The Once A Month Mom Cook Off is designed to motivate and inspire you to dive into once a month cooking (also referred to as power cooking, freezer cooking, oamc and bulk cooking)…. Throughout the month Amy from Amy’s Finer Things and I will…

WFMW: Craft and Toy Storage

Posted in Homemaking

I try to keep lots of crafting supplies on hand for Munchkin and her friend.  The problem is keeping those supplies organized and easily in reach.  We had some of the plastic rolling carts, but they were always collapsing and breaking.  A few years back, we had purchased a couple of the Trofast system units from IKEA for storage of some of my things.  When we moved this time, I decided these would be perfect to store craft and school supplies. (The white stand next to the Trofast units is from our old bathroom, but it doesn’t work at our…
