Spicy Crockpot Chicken Soup

Posted in Gluten Free

D has been on a soft foods diet for nearly a week now, so I’ve needed to come up with meals that don’t heat up the house and work for his restricted diet. I made a less spicy version of this soup for my mother-in-law and father-in-law when they were visiting by not including the cayenne pepper and reducing the amount of fresh ground pepper. It’s pretty easy to adjust to your family’s taste preference by adding or subtracting ingredients. If you want a more spicy version, just toss in some of your favorite spicy peppers. I like to eat…

Homemade Yogurt Fruit Leather

Special thanks to Lucky Star 14 LLC for providing samples of their dehydrator sheets to use in our home for evaluation. Recently, I heard about a twist on regular fruit leather – yogurt fruit leather. It sounded like a snack that I’d really enjoy. We have lots of yummy fresh berries at the farmers market this time of year, so it was a perfect time to give them a try. (You can also used thawed frozen berries, if needed, which is what I did this time as we ate all of the fresh berries before I could make the yogurt…

Gluten Free Carrot Cake Cupcakes with Honey Cream Cheese Frosting

Posted in Gluten Free

Munchkin loves carrot cake, so I’ve been working on creating a moist gluten free carrot cake with a healthy cream cheese frosting. These cupcakes are super moist. The frosting is not overly sweet, but can easily be made sweeter by adding a little more honey. If you want to make them completely grain free, you can just substitute more almond flour for the oat flour. Ground…

Homemade Fruit-on-the-Bottom Yogurt Cups

It took some time, but I finally have a method of yogurt making that produces consistent results for me. I’ve decided that making plain yogurt seems to produce the best yogurt, so we just sweeten (if desired) when we eat it. From the basic yogurt, I can then strain it to make greek yogurt as well as yogurt cheese. I like to make my yogurt 2 quarts at a time as that is roughly a week’s worth of yogurt for us. Because it’s easy to make, you can easily adjust how much you make at a time. I personally like…

Valentine’s Day Treat: Chocolate Covered Strawberries

Posted in Family, Gluten Free, and Holidays

My mom was a huge fan of chocolate. While I didn’t inherit the chocolate craze, Munchkin did. Her Daddy’s sweet tooth comes and goes, so I never know when he’ll be craving something sweet to eat. Before you think I’m crazy, I will say that I do enjoy chocolate, but I’m not one who craves it all the time. A little chocolate now and again works for me. I know, I know… I’m weird. lol! My idea of a really good chocolate treat involves fruit and chocolate. One of the best pairings, in my opinion, is strawberries and chocolate. They…
