Going to the Grand Canyon

Posted in Family

I’m so excited! We are finally on our way to the Grand Canyon.  We have planned to go more than once since we moved to Arizona this past summer, but it never worked out.  After some other tentative plans fell through, we decided to head there this week.  I scrambled around and found a campground for us to stay at (in our travel trailer).  We should have internet access, but I’m not sure how much I’ll be posting this week. The temperature there is going to be much colder than we are use to, so it should be interesting.  We…

Homeschooling: Too Much To Do, Too Little Time?

Posted in Homeschooling

When I first started homeschooling Munchkin, I had grand plans of all of the wonderful things that we were going work on, and all these fun things we were going to do.  All too quickly I learned that there was no way to do everything that we wanted to do, and I also learned that if we tried to do it all, we would both become burned out on homeschooling. Over the years, we stepped away from many school-at-home type activities.  We’ve become more relaxed about homeschooling.  We’ve also learned to have more fun with homeschooling.  I’ve also worked with…

Crispy Rice Baskets for Easter

Posted in Gluten Free, and Holidays

These start off with the traditional recipe – 3 Tbsp butter, 1 package large marshmallows, and 6 cups rice cereal (I used gluten free Koala Crisp cereal – chocolate crispy rice). Prepare as usual – melt butter over low heat until melted, stir in marshmallows until completely melted, remove from heat and add cereal, stir until cereal is completely mixed in. Grease some muffin tins (I greased with coconut oil) and add cereal mixture.  Make a well in the top, so you can “fill” the basket. For the green, I used green marshmallows as Munchkin doesn’t like coconut.  I added…
