I wanted to try a different dessert that wouldn’t feel heavy, but would taste delicious.  I wasn’t sure how Munchkin would feel about it since she’s not really big on coconut, but it turns out that she enjoyed it. Gluten Free Coconut Cake Recipe Ingredients: 1 gluten free yellow cake* 1 cup coconut milk 2 Tbsp honey 1 1/2 cup heavy whipping cream 1/4 cup powdered sugar 1 tsp pure vanilla extract 1 cup unsweetened shredded coconut, toasted Directions: Poke holes in cooled yellow cake (still in pan). Towards the end of the last school year, we started using Analytical Grammar.  I was one of those moms that said I wouldn’t use a grammar program that required a great deal of diagramming.  Well, once again, I’m eating my own words.  It turns out that diagramming works for Munchkin.  She doesn’t always like it, but it does work for her. Munchkin was excited about the possibility of doing this review as she currently is thinking about her plans for the future.  When we received the dvd, I popped it into the computer and started printing out the lesson plans, learning objectives (by chapter), course syllabus, and key terms (by chapter).  (You can view these on the computer, but I wanted to have physical copies for Munchkin.)  I had Munchkin look over everything prior to starting the lessons, so she would have a better understanding of the class.
