I haven’t participated in Meal Plan Monday for a while now, but it’s time to get back in the swing of things. D is starting a gluten-free diet, so menu planning is going to be critical (especially until we get the hang of things). We’re keeping things simple for now as we’re just learning how to go gluten free.
Breakfasts for D will consist of:
1. Gluten free pancakes
2. Fruit
3. Breakfast burritos made with corn tortillas, eggs, cheese, fresh salsa, & sausage
Lunches for D will consist of:
1. Corn tortilla sandwich wraps (with meat, cheese, mayo, and lettuce)
2. Summer wraps
3. Salad
Dinners for the week will be:
1. Steak with baked potatoes and veggies
2. BBQ Pork Chops with veggies
3. Chicken with corn on the cob
4. Salad with chicken strips
5. Mexican Bake made corn tortilla chips
6. Eggs, Bacon, Fresh Fruit
7. Pasta Bake made with gluten free pasta
I hope to be able to figure out how to make some good gluten free bread, so I can make some bread to go with our meals. D will also miss his regular sandwiches, so I need to hurry up and figure this out. lol!

We have been gluten free over 6 years now. It was a huge blessing for our daughter and myself, that is for sure! We also need to be dairy free. If you need some recipes or have some questions, you can check out my blog angelaskitchen.com.
Good luck. It won’t be that hard once you are in the swing of things. My kids have a lot of fun experimenting with different foods now and cooking it themselves now.
Great menu! Summer is a great time to start. There is so much tasty freash stuff out there, the gluten stuff isn’t missed so much.

If you haven’t already, you should try Pamela’s Wheat Free Bread Mix and Gluten-Free Pantry’s Favorite Sandwich Bread Mix.
The favorite in this house is Pamela’s. I make hamburger buns out of it too. My husband even likes it just as much as regular bread.
You’ve probably tried some of the awful GF breads out there. Many of them can be made edible by toasting. If it’s still not edible, you can make seasoned toasted bread crumbs out of them. I’ve never met a GF bread that doesn’t make good breadcrumbs.
