Favorite Ingredient Friday: Popcorn Chicken

Posted in Gluten Free, and Homemaking

I was requested to post the recipe for the popcorn chicken that I listed on my menu for Menu Plan Monday. So here it is (this is for 2-3 people):
2-3 Raw, Chopped Chicken Breasts (can use other cuts if you prefer)
1/2 C bread crumbs (for gluten free – use crushed gf tortilla chips)
1 tsp Italian seasoning
1/4 C grated Parmesan cheese
Put ingredients in Ziploc baggy and toss until coated. Bake at 400 degrees for 10-15 minutes (until cooked through). Serve with your favorite dipping sauce. (On a side note: if you prefer a more crispy chicken, you can either pan fry or deep fry these.)
Simple and delicious!!

Goodness me! I don’t think I’ve ever seen a recipe so simple as this one! Can’t wait to try it out on my little man – 9 yr. old!

You know-I just made popcorn chicken this week! Except mine were the hot and spicy popcorn chicken pieces. We ate them over salad. These look yum too! Thanks for sharing!
