Italian Chicken Packet

Remember when I wrote about the new Give Every Night a New Flavor website?  Well, today, I got to try the website from start to finish.  It was easy, peasy, and I ended up with a simple, delicious meal with very little clean-up or prep work.  Love that!

Selections

The first part of creating the meal is heading over to the Give Every Night a New Flavor website.  You enter in your local Kroger chain.  (I’ll tell you why this is a good thing shortly.)  Then, you decide what type of meal your family would enjoy tonight – Tex-Mex, Asian, American, or Italian.  After you make that selection, you decide how long you want the meal to take – less than 15 minutes, less than 30 minutes, or 30 minutes plus.  Finally, they ask how many people this meal will need to feed – 1 person, 2 people, or 4 plus.

Meal Choices

After making my selections, the website generated a list of recipes that met my criteria.  The only thing that would make this better would be if you could put in food allergies, but I know that is asking a lot.  As is, many of the recipes can be made gluten free.  I picked out the Italian Chicken Packets as I really liked the idea of something easy with very little clean up.

Meal Information

You know how I mentioned that entering your local store was a good thing?  Well, here is the reason why…  The ingredient list generated for the recipe shows you which items are on sale at your local store.  How cool is that?  I looked over the ingredient list to see which items I need to create the recipe and clicked a button to add them to my shopping list.  Once again, a very nice feature.

Recipe

Now, on to the recipe itself.  It only contained 4 ingredients: chicken, broccoli, Italian dressing, and diced tomatoes.  Since I tend not to use Italian dressing these days, I just used some olive oil and seasonings instead.

Chicken Packet Prep

The preparation time was extremely quick, so everything was in the oven in no time flat.  I ended up needing to cook the packets 30 minutes instead of the recommended 20-25 minutes, but I did use frozen broccoli which probably was the cause of the increased cooking time.  I finished off the chicken packets with a sprinkling of some herbs and Parmesan cheese.

We decided that next time I would marinate the chicken over night to give it more flavor.  Overall, the meal was super easy and delicious.  Munchkin loved that the clean-up is minimal. **grin**
